Ingredients: 2 Cans Coconut milk; 1-2 tbsp Thai Curry Paste (I use the authentic brands); 2 tsp Thai fish sauce (Or soya sauce if vegetarian); 1 tsp Dark muscovado sugar or palm sugar (Option (can use sweet chill sauce instead)); 1 inch Root ginger (cut into thin strips) (Optional); 1 Lime; 1 Medium Aubergine (cut into strips); 1 Medium Courgette (cut into strips); 1 Small Sweet potato (cut into strips) (Optional); 100 grams Green beans (mange tout or sugar snap peas) ( Whatever you prefer (all work well)); 1-2 Peppers (red/orange/yellow); 3-4 Baby corn (cut into strips); 3-5 Leaves Thai basil or ordinary basil (or coriander works well too as photo'd). (Optional to add at end); 150-200 grams Protein source (you can use prawns, 1-2 chicken breasts cut into small chunks, tofu, chicken style quorn chunks, butter beans or chickpeas); 1 handful Peanuts (Optional for crunch at end)
