Ingredients: 1 tbsp olive oil (or oil of your choice (e.g.rapeseed)); 1 chopped onion; 2 peppers ((colour of your choice)); 2 sticks of celery ((chopped into small chunks)); 2 large mushrooms (or 6 small); 2 tins of chopped tomatoes; 1 tinned mixed beans in chilli sauce (or red kidney beans in chilli sauce); 3 tsp chilli powder (or 1 sachet of chilli con carne mix); 1 packet (300g approx) vegetarian mince meat substitute (Packs vary in size from 260-500g, all work)
