Ingredients: 2 eggs; 1 tsp oil; 2 chopped spinach balls (defrosted and remove water); pinch pepper; 2-3 slices or grated cheddar on top; 1/2 bag mixed salad leaves (wash before use); 1/4 cucumber; cherry tomatoes; red chilli; peppers; whole leafed spinach ((I used cooked from frozen as nice to add some warmth to the salad if not summer)); any veggies you fancy... ((Sometimes I add some chickpeas to the salad if I want it to be more substantial).); slices of avocado (optional); balsamic glaze or balsamic vinegar dressing; salt & pepper to season (optional)
