Ingredients: 2 eggs ((Free range or organic is best).); 2 frozen chopped spinach balls defrosted ((Izzy prefers the chopped spinach over the whole leaf spinach as there is no noticeable stalks and is not really noticed in the omlette).); a few slices (finely sliced) cheese or grated cheese ((I sometines use a vegan cheese, the smoked Applewood one is yummy melted, or a good extra mature cheddar).); 1 tsp oilive oil; season with pepper if you like; chopped cucumber ((I often peel the cucumber unless it's organic, or wash it super thoroughly).); 3-4 baby plum tomatoes; 1/4 pepper ((I go for yellow or orange as for some reason I seem to tolerate them better. I try and have organic to reduce the exposure to chemicals).); coriander to garnish (optional); 1-2 tsp balsamic vinegar (optional); 1 tsp olive oil (optional); drizzle balsamic syrup (optional); seasoning
