Ingredients: 1 nest wholewheat noodles; 1 cup frozen edamame beans; 2 cups fresh spinach, sliced; 1/2 avocado, cut into small cubes; 1/4 cucumber, cut into small cubes; 1 tsp sesame oil; 1 tbsp rice vinegar ((works with apple cider vinegar as a substitute)); 1 tbsp mirin; 1 tbsp dark soy sauce; 1 tsp honey; 1 tbsp crunchy peanut butter (smooth is fine too); 1 tsp dried chilli flakes (optional); 1 tsp sesame seeds ((see notes)*)
