Lentil & Mushroom Bolognese

Ingredients: 1 pack ready cooked green lentils; 1 medium white onion (finely chopped); 1 tin chopped tomatoes; 4 small portobello mushrooms (or 2 large ones) chopped (Any mushrooms will work ); 2 tsp paprika; 2 tsp crushed garlic ((I use from a jar, or 2 gloves)); 5-6 sunvdried tomatoes (finally chopped); 2 tsp worcester sauce; 2 tsp soya sauce; 1 low sodium vegetable stock cube (disolved in 150mil boiling water) (I used Kallo organic); 1 tbsp extra virgin olive oil; black pepper; 1 avocado; cucumber; cos lettuce; 1 small bag baby spinach; 8 baby plum or cherry tomatoes; 1 tbsp extra virgin olive oil; 1 tbsp balsamic vinegar; pinch of salt and pepper; drizzle of balsamic syrup
