Equipment

  • 1 large bowl
  • 1 mixing spoon
  • 1 cookie cutter
  • 1 large baking tray
  • 1 sheet of baking paper
  • 1 teaspoon

Ingredients

  • 1 cup organic oats
  • 1/2 cup oat flour (or ready oats, or wholemeal spelt)
  • 2 tbsp ground flax seed
  • 5 tbsp water (to mix with flax)
  • 2 tbsp collagen powder I use unflavoured, grass fed, hydrolysed 100% bovine collagen (also see notes)
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon (optional)
  • 1/4 tsp mixed spice (optional)
  • 1 pinch sea salt (optional) I use pink Himalayan
  • 1/4 cup extra virgin olive oil
  • 1/4 cup organic maple syrup or equivalent I use maple syrup as it's low FODMAP, but you can use date syrup, molasses honey etc.

Optional

  • 1 tbsp mixed seeds or nuts I often add mixed seeds
  • 1 tbsp desiccated coconut
  • 1 tsp vanilla extract If you don't add the spices, vanilla extract works really well.
  • 1 tbsp extra collagen powder If you don't mind a drier biscuit, I often add an extra tbsp to get more protein in

Instructions

  • Preheat oven to 160 degrees.
  • In a mixing bowl place all the dry ingredients. Then add the wet ingredients and then mix to combine.
  • Place some grease proof paper or baking paper on a large tray.
  • Get a cookie cutter or pastry shape cutter, table a tablespoon of mixture, press into the cutter with a teaspoon, remove cutter. Repeat until all the mixture is done. It makes around 15 biscuits.
  • Put cookies in oven for around 15-20 minutes until the edges go a little golden. If you like a brunch biscuit. Cook a little longer or simple turn oven off after baking and leave in the oven to go hard.
  • Enjoy!!!

Notes

If you make the basic recipe first and see what you think, then you can adjust the next batch more to your personal preferences. I often add 1/4 of oat bran for extra fibre and an extra tbsp of collagen powder too - but it makes the biscuits a little drier and less treat like as I do not increase the olive oil or maple syrup.
If you want to make them more delicious and less healthy  - obviously you could use butter instead of EV olive oil, or you could use a plain flavoured oil like avocado oil. For coconut flavour. coconut oil. For sweeter, 1/3 cup of maple syrup or your choice of sugar.
I like to add seeds or crushed nuts, or sprinkle it on as topping for a few of the cookies so if Isabelle wants a plain one she can, or she likes decorating some with her choice of topping.
