These Glow bites are simple, nourishing biscuits made with oats, flax and collagen. They're designed to be an easy, feel-good nourishing snack or treat for busy days - supporting your routines with ingredients that love your body back. They are perfect with a cup of tea, after practice to refuel, or as a little treat and moment of feel good self-care nourishment in your day.
1/2cupoat flour (or ready oats, or wholemeal spelt)
2tbspground flax seed
5tbspwater (to mix with flax)
2tbspcollagen powder I use unflavoured, grass fed, hydrolysed 100% bovine collagen (also see notes)
1/2tspbaking powder
1/4tspcinnamon (optional)
1/4tspmixed spice (optional)
1pinch sea salt (optional)I use pink Himalayan
1/4cupextra virgin olive oil
1/4cuporganic maple syrup or equivalentI use maple syrup as it's low FODMAP, but you can use date syrup, molasses honey etc.
Optional
1tbspmixed seeds or nutsI often add mixed seeds
1tbspdesiccated coconut
1tspvanilla extractIf you don't add the spices, vanilla extract works really well.
1tbspextra collagen powderIf you don't mind a drier biscuit, I often add an extra tbsp to get more protein in
Instructions
Preheat oven to 160 degrees.
In a mixing bowl place all the dry ingredients. Then add the wet ingredients and then mix to combine.
Place some grease proof paper or baking paper on a large tray.
Get a cookie cutter or pastry shape cutter, table a tablespoon of mixture, press into the cutter with a teaspoon, remove cutter. Repeat until all the mixture is done. It makes around 15 biscuits.
Put cookies in oven for around 15-20 minutes until the edges go a little golden. If you like a brunch biscuit. Cook a little longer or simple turn oven off after baking and leave in the oven to go hard.

Notes
If you make the basic recipe first and see what you think, then you can adjust the next batch more to your personal preferences. I often add 1/4 of oat bran for extra fibre and an extra tbsp of collagen powder too - but it makes the biscuits a little drier and less treat like as I do not increase the olive oil or maple syrup. If you want to make them more delicious and less healthy - obviously you could use butter instead of EV olive oil, or you could use a plain flavoured oil like avocado oil. For coconut flavour. coconut oil.
