Zingy Japanese Cucumber Salad

Name: Zingy Japanese Cucumber Salad
Ingredients: 1 medium to large cucumber; 2 spring onions, finely sliced ((If you don't want it to be too strong, only use 3/4's of the spring onion, leaving out the stronger white part).); 1 red chilli, finely sliced (take out the seeds if you don't want it too hot).; 4 tsp finely chopped coriander leaves; 4 tsp finely chopped mint leaves; seasoning (some freshly ground black pepper and sea salt); 3 tsp freshly finely grated ginger ((It's worth the effort of finely grating the ginger. I have tried chopping it and it is better finely grated).); 1 garlic glove, finely grated (optional) ((The garlic does add something to this salad, however, I omit the garlic if for whatever reason I do not want to be smelling of garlic!).); 2 tbsp apple cider vinegar; 2 tsp toasted sesame oil; 2 tsp honey; 1 tsp mirin (optional) ((mirin is a sweet wine, I sometimes do one tsp of mirin and only 1 tsp of honey if I don't want it too sweet)); sesame seeds (optional) to sprinkle on top to serve
