Name: Coconut Cauliflower, Sweet Potato & Chickpea Curry
Ingredients: 1 tbsp oil ((I like to use organic rapseed oil, but you could use coconut, olive or vegetable).); 1 onion (white or red); 1 tin chopped tomatoes; 1 tin coconut milk; 1 tin chick peas (drained); 1/3 jar of korma paste; 2-3cm peeled ginger (optional); 2 peeled sweet potatoes (chopped into cubes); 1 small cauliflower (chopped into small florets); chopped coriander (optional)
