Halloumi Curry

Name: Halloumi Curry

Ingredients: 1 tbsp oil ((I tend to use organic rapseed oil or you could use coconut),); 1 large onion (chopped); 1 cauliflower (cut into small florets); 1 medium sweet potato (peeled cut into chunks); 1 250g pack halloumi (cut into chunks); 2 gloves garlic (grated); 3cm piece of ginger (grated); 1.5 tsp chilli powder; 1 tsp (heaped) tumeric; 2 tsp (heaped) garam masala; 2 x 400g tinned chopped tomatoes; 1.5 tbsp tomato puree; 400 ml tin coconut milk; 1 handful chopped coriander; wholegrain basmati rice (optional) (I often use the pre-cooked wholegrain basmati rice (or cook rice from scratch, I usually do 50g uncooked rice per person). If you are wanting to reduce the carbs, swap the rice for more vegetables.); tender steam broccoli, green beans or spinach (optional sides); 250 g natural yoghurt ((I tend to use full fat organic, but you can use low fat; zero fat I find too tart).); 1/4 grated cucumber; 1 tsp mint sauce
