A Veggie Twist on a Spanish Omelette

Name: A Veggie Packed Spanish Omelette

Ingredients: 2 tbsp olive oil; 1 medium onion, peeled and finely chopped; 1 small red pepper ((you can use a yellow or orange if you don't have red)); 50g peas or sweetcorn; 2 tbsp grated cheese ((I use whatever I have inthe fridge, usually extra mature cheddar, but Gruyere worrks well, Parmesan adds a lot of flavour)); 175g sweet potatoes, peeled and chopped into 1cm cubes ((works well with white potatoes or new potatoes with the sking on)); 2 balls frozen spinach (defrosted); salt and pepper seasoning
